The speaker's mic picked up a lot of feedback, so it was hard to hear everything clearly. List of facts I thought I heard: The speaker is a fisherman, does it as a hobby. The fat content of a fish determines the quality of a fish. In order to determine the fat content, the purchaser looks and feels in the section of the fish where the tail is removed. The dark red color that some people desire is not a good indicator of quality. A dark red piece lacks the marbling caused by fat. In addition to that, the redness of tuna is sometimes artificially created by injecting dyes or gases.
The quality of this particular fish was "as natural as could be". It was about 525 pounds in its current state. Before being cleaned and cut, it was over 700 pounds. Fish larger than 800 pounds are not as tasty as those that fall in the 350-700 pound range. This one was probably around 15 years old. He said that the teardrop shape of the fish was notable, but I'm not sure of the reason. This fish was harvested just before migration. I guess the bluefin bulk up before this voyage (NJ to Spain to the Indian Ocean), because he said they do not eat while traveling. Like people, most of the fat is closer to the surface of the fish. There was a clear gradient from white to red in the slices.

Rough, quick edit. Left audio as is because this is not a commercial - get the full ambience from the crowd noise of the packed stand. Sped up parts where the audio was particularly bad and where the action did not occur on the camera's side. An ojisan was also taking video with a much nicer camera and tripod.
